This looks like a great, healthy, simple and tasty vegetable dish. But, why leave those whole cloves of garlic in when it is served? Surely they are used in the cooking to add flavour but surely nobody would want to eat a whole (and unpeeled) garlic clove if it is left in?

You didn't have potatoes in the medieval period. The "new world" wasn't discovered until at best the very end of that time period and that's only if Christopher Columbus found them in the west indies.

Can we just chop the garlic to small parts instead just slice it?
Why is the skin left on the garlic? That prevents it from “sharing” its flavor with the rest of the dish, and means you have to get your fingers into your food if you want to peel and eat it?
