This is the kind of food I like best, the kind of food that anyone can make any night of the week at home without too much fuss, and which is always going to be delicious. I would cut some cherry tomatoes in half and fry them in the oil used for the potatoes, and serve them on the same plate topped with more of the garlic sauce and fresh parsley.

Do you not blanch the potatoes before frying them? Also, when coating cod filets with flour, I like to mix some lemon zest grated on a microplane grater and mix that in with the flour for extra flavor.
